Instant Pot Chicken and Rice recipe

classic comfort food dish is easy to make in an Instant Pot. Simply add chicken, rice, broth, and vegetables to the pot and cook on high pressure for 10 minutes.

1 pound boneless, skinless chicken breasts, cut into bite-size pieces 1 cup long grain white rice 1 1/2 cups chicken broth 1/2 cup diced onion 1/2 cup diced carrots 1/2 cup diced celery 2 cloves garlic, minced 1 teaspoon dried thyme 1 teaspoon salt 1/2 teaspoon black pepper 2 tablespoons olive oil

Step 1

Turn on the Instant Pot and press the "Sauté" button. Add olive oil and let it heat up.

Add diced onion, carrots, and celery to the Instant Pot and sauté for about 2-3 minutes or until the vegetables start to soften.

Add minced garlic, thyme, salt, and pepper to the Instant Pot and sauté for another minute.

Add the cut chicken pieces to the Instant Pot and sauté for about 2-3 minutes or until they are lightly browned.

Add 1 cup of rice and 1 1/2 cups of chicken broth to the Instant Pot. Stir everything together.

Close the Instant Pot lid and set the valve to "Sealing" position.

Press the "Manual" or "Pressure Cook" button and set the timer for 10 minutes.

When the cooking time is done, let the Instant Pot naturally release pressure for 10 minutes. Then turn the valve to "Venting" to release any remaining pressure.

Open the Instant Pot lid and fluff the rice with a fork.
